Walk-in and dry storage should be near the rear/ service door. The manager desk must be clear of the wet areas. We try to keep the prep room as open as possible. That is, we don't want the walk-in located in the middle of the space and we prefer to limit any walls keeping the space open for flexibility during prep. Talk about sustainability. We utilize sustainable concepts where it makes sense. Low flow plumbing fixtures, high efficiency water heater, high efficiency fluorescent ballast and LED lighting, high efficiencies RTUs are some of the areas we have already made strides. Additionally, we are continuing to look at ways to make our process more environmentally conscious. How do you select the equipment you use? We do this through internal testing. Five Guys corporate thoroughly tests any new or substitute equipment on company stores before it releases them to be used in the franchisee market. What's the biggest issue today related to the back of house area? We feel confdent in the back of the house and don't have any major issues. Taking Tell us what makes Five Guys so unique? It starts with the product and customer experience. We serve a simple, but high quality product. People don't often realize how much effort we put into selecting our ingredients, and then the work we do to make sure that the product is as fresh and high quality as possible. From the logo to the interior environment, Five Guys doesn't try to be more than it is. We focus on what we do well and we try and involve the customer in every aspect of the process. CCR with Gregg S Elstro What's your favorite vacation spot? Our favorite spot to vacation is Positano, Italy, where we were married. The people, culture and food are amazing – not to mention the scenery. What book are you reading now? "Churchill and Company: Allies and Rivals in War and Peace." After our grand opening in London, we visited the Churchill 86 CommerCial ConstruCtion & renovation — September : OctOber 2013 War Rooms. We became fascinated with him. There is something inspiring about a man who withstood a lot of adversity during one of the most difficult times in history. How do you like to spend your down time? With my hectic schedule there is little down time, but when there is I like to go for a round or two of golf with my son and wife.
