BuRgeRS anD fRieS, oH My CommerCial kitChens Describe a typical day. In the restaurant industry, that's hard to defne. We try to be proactive versus reactive, as much as possible. However, there are situations that pop up in an instant. So, day-to-day I try to be as quick and agile as possible to provide the support my team, operators, consultants and vendors need to do their jobs. What do you see as some of your biggest opportunities moving ahead? I'd like to streamline the development process, control costs and continue to strive for perfection in design and construction. What is your growth plan? Refresh strategy? We've grown very rapidly, and our older franchise locations are now at the point of needing to be refreshed. We have launched a store refresh program to help outline steps for stores that are 10 years or older. We have started with our corporate-owned stores. The results 82 have been outstanding. The crew is invigorated; the customers are happy and the stores are running well. How many stores do you plan on adding? We are continuing to grow in the United States as well as internationally. We'll be opening about 150 locations in the United States and Canada, and approximately fve in the UK (United Kingdom). What about refreshes? A lot of our refreshes are focused on bringing stores up to date with our branding package and evaluating their equipment needs. Many stores have been updated along the way, so some just need simple changes. There isn't one magic adjustment, but overall the refreshes have gone really well. What is today's customer looking for?
